As more and more people are rediscovering or probably more accurately, discovering for the first time, how wonderful just baked homemade bread can be, manufacturers of bread making machines seem to be in an arms race to make a better, more feature packed machine. The Cuisinart CBK-200, if not leading the race for added features and programs, is certainly among the leaders.
Cuisinart proudly tell of the 101 combinations of baking that the CBK-200 is capable of. Even if you exclude many of these as just being a variation of the shade of crust, that is still an awful lot. So what does the Cuisinart CBK-200 actually do? Well, to put it simply, it makes bread and jam, cakes and dough. But it makes a whole variety of breads from a standard white loaf to artisanal bread. In addition it also makes low-carb bread and gluten free bread.
While other bread makers will happily make dough suitable for pizza or bagels etc., the Cuisinart CBK-200 (see today's price) will also make an artisanal dough, which uses lower temperatures and longer rising times to improve the taste and texture of the finished bread, for specialty rolls and breads that need to be shaped then can be baked in a conventional oven. It may be imagined that the Cuisinart CBK-200 would be complicate to use with all the functions but the control panel is well laid out and will soon become familiar to users.
The Cuisinart CBK-200 uses a different method of baking the bread and raising the dough than most other ovens, it uses convection heat driven by a fan. This is to ensure even heat distribution to help result in an evenly baked loaf. The Cuisinart CBK-200 also share many features common to many other bread makers like a delay function to allow you to prepare your ingredients well in advance of when you want your loaf baked as well as an automatic switchover to the 60 minute keep warm feature.
Bread makers usually produce one of two shapes of loaf. Either a horizontal loaf, which is similar to what most people perception of what a loaf of bread looks like normally, or a vertical loaf. The vertical loaf is much taller that one would usually expect. The Cuisinart CBK-200 describes itself as a horizontal bread maker but it is really a bit of both. The Cuisinart CBK-200 is designed to make up to a 2 lb. loaf of bread, and, by having the slightly unusual shape of resulting loaf that it does, it manages to reduce the overall footprint and therefore the amount of counter space it takes up. The Cuisinart CBK-200’s dimensions are 10 ½ inches x 16 ½ inches x 12 ¼ inches and it weighs 14 lbs.
The 101 combinations that the Cuisinart CBK-200 offers is a little misleading, it does offer 101 combinations but they consider a 2 lb. white loaf with a choice of 3 crust shades, a 1 ½ lb. loaf with a choice of 3 crust shades and the same loaf but this time a 1 lb. version adds up to 9 combinations, so you can see how they would soon add up. Counting the way that other bread maker manufacturers do, the Cuisinart CBK-200 has 16 settings, which is still quite considerably more than most bread makers.
So what can you actually bake with the Cuisinart CBK-200? There is a white loaf, a whole wheat loaf, a French / Italian style loaf (all of which are available with a rapid bake option) or a quick loaf setting. For these there are settings for a 1 lb., a 1 ½ lb. and a 2 lb. option with a choice of either a light, a medium or dark crust. Then there comes the more specialized breads, low-carb and gluten free. The Cuisinart CBK-200 in addition to offering a setting to make standard dough also has an ‘Artisanal dough’ setting. This program allows for longer cooler rises of the dough which gives the final bread a more chewy texture. The various ‘Sweet Bread’ settings adjust the baking times and temperatures to allow for the extra sugar, fats and proteins in the bread which leaves a darker loaf than usual. There is also a rapid bake setting for the sweet breads to make them quicker.
Then, although a favorite with bread, not quite the same – a jam program. Bread makers are actually ideal for making jams, chutneys and marmalades. They have a carefully controlled temperature and automatic stirring. The final two programs are for a very quick bake white loaf which can be made from start to finish in about an hour and then a bake only program. The bake only program can be used to either brown a made loaf a little more or to bake pre-made dough.
During many of the bread making programs there is an audible warning and a pause. This is to allow the addition of extra ingredients like nuts, shredded cheese or fruit.
At the end of the baking cycle the Cuisinart CBK-200 automatically switches to the keep warm function for 60 minutes.
If you want to prepare your bread well in advance, the Cuisinart CBK-200 has a delay finish option of up to 12 hours. So you can add all your ingredients and at 7.00 pm and wake up to freshly baked bread at 7.00 am.
When you first look at the Cuisinart CBK-200 it can be a little daunting to see that there are 101 different options – until you realize that most of the bread making programs are counted as 9 different options; 3 for the different weights of bread, 1 lb., 1 ½ lb. and 2 lb. and a further 3 for the crust settings; light, medium or dark. In reality there are actually 16 options for making bread, dough, jam and cakes, which is a lot more manageable. In addition the Cuisinart CBK-200 has a 12 hour delay so that your bread can be finished baking up to 12 hours after you set the machine.
