Bread is one of the most convenient food products available. Imagine a sandwich or hamburger without bread, it would be quite messy eating the contents without it. Bread makes food portable, think of trying to eat a ham salad sandwich on the move without the bread. Unfortunately most of the bread that we eat is mass produced industrial white bread which is OK when used to make an edible covering for otherwise messy food but on its own can be a bit bland or tasteless. So why do we eat so much of it? Standard white bread is cheap to make and stays fresh for a long time so it suits manufacturers and retailers, if not the consumer.

We eat it mainly because it is what we are offered or is what is available. The alternative is to find an artisanal baker or make our own bread. Making our own bread has always been time consuming and requiring of a bit of skill – that is unless we use a modern programmable automatic bread maker like the Zojirushi BB-CEC20. With the Zojirushi BB-CEC20 (see best price) you have the option not only to make wonderfully tasting white bread but a whole range of other breads, all you have to do is add the ingredients, select the program and press the button.

Come back a while later and enjoy a tasty slice of homemade bread. The Zojirushi BB-CEC20 does not just bake bread only, you can use it to make jams and marmalades to put on your bread. There are also a selection of programs where you can input your own settings to make things like meatloaf (a suggestion from Zojirushi). You can also just make dough, for when you want to shape the dough yourself before baking, for example when you are making pizza or bagels.

OUR REVIEW​

The Zojirushi BB-CEC20 is designed to be able to make an extra-large (2 lb.) sized loaf of bread. As such it is a little larger than many automatic bread makers, measuring just over 9 ½ inches x 17 inches x 12 ½ inches, it weighs 20 lbs.

At first glance the control panel on the Zojirushi BB-CEC20 may look a little complex but, in reality is quite straightforward and instinctive to use. Everything is controlled by 6 buttons, which when you have used them a few times become second nature.

  • The Crust Control has 3 settings and allows you to select either a light, medium or dark crust.
  • The Timer button allows you to set a delay, in 10 minute increments, of up to 13 hours. So if you want to wake up to freshly baked bread at 7.00 am and you add the ingredients and set the Zojirushi BB-CEC20 at 8.00 pm the previous night, just set the delay for 11 hours.
  • The Start / Reset button starts the process and allows you to cancel it before the program is finished if you need to.
  • The Course setting is probably the most important control on the Zojirushi BB-CEC20. It is what tell the machine exactly what it is processing. Each time you press the Course button it cycles through all the available programs.
  • Basic if for making a standard loaf using active dried yeast.
  • Basic Wheat is similar but using whole grain flour.
  • Basic Dough will go through the process and stop when the dough is complete. This program is used when you want to hand finish the dough yourself such as when you are making pizza bases or bread rolls.
  • Quick is similar to the Basic setting but uses rapid rise yeast and reduces the overall time to make the bread by about 1 ½ hours.
  • Quick Wheat, again using rapid rise yeast and reducing the overall time by about 1 ½ hours.
  • Quick Dough will make a dough, using rapid rise yeast, in about 45 minutes.
  • Jam setting can be used for making a variety of fruit jams. In addition it can also be used for chutneys and marmalades.
  • Cake this setting will bake a surprising variety of different cakes. Of course they will all end up shaped the same as the bread.
  • Sour Dough Starter this is a very useful program that is not that common on many bread makers but comes is very useful if you like sour dough bread. There are two options a quick starter and one that takes a week to mature to give a fuller flavor.
  • Home Made this is where you can set the parameters that the Zojirushi BB-CEC20 will use. There are options for adding 3 different personal settings. There is a recipe for making meatloaf in the user’s manual as an example of what you can do.

Every bread maker manufacturer states how important it is to have the correct quantities of ingredients to make the best loaf. Unfortunately they then go on to give the quantities in cups which is, especially with flour, notoriously inaccurate. Zojirushi do at least give weights as well to enable you to get the best results from you bread maker.

  • 3 different crust settings – you have the option to have your finished loaf with either a light, medium or dark crust.

  • Cake setting – for baking cakes, including mixing ingredients.

FINAL THOUGHTS

Without a doubt the Zojirushi BB-CEC20 is a well thought out bread maker. It is highly flexible in the types of bread it can bake and that flexibility has been extended even further with the addition of additional programs. Program such as the Jam, Cake and the Sour Dough Starter programs.

The Zojirushi BB-CEC20 also allows the user the option of creating their own programs to suit what it is that they want to bake in their bread maker. Although many other bread makers will make a 2 lb. loaf, in many cases it ends up being very tall and a little odd looking. Because of the shape of the baking pan, with the Zojirushi BB-CEC20 you end up with a ‘normal’ looking loaf of bread that is practical to use for sandwiches, for example. The manual that comes with the bread maker is very easy to follow and clearly laid out.
