To make these, we advise you take a look at getting an ice cream sandwich maker. You’ll get the polished results that everyone admires (and eats!) at the dinner table with a smile on their face. There are gadgets out there that will create the sandwich cookies and then some that will help you smooth out the ice cream itself.

Peach Ice Cream Sandwiches w/Chocolate Cookies

  • 7 eggs
  • 3 cups sugar
  • 15 fresh peaches (or 1 bag of frozen peaches)
  • 3 1/2 cups of heavy cream
  • 2 cups of half and half
  • 3 teaspoons vanilla

  1. Please note: if using frozen peaches, start by putting them to the side and letting them defrost so they are ready soon (about 30 minutes).
  2. Warm the half and half on the stove until hot but do not let it bubble. Add the heavy cream. Put it to the side.
  3. Mix the egg yolks and the sugar in a bowl and hand whisk or use your attachment. The mixture should be thick.
  4. Chop the peaches (fresh or frozen) into bite sized chunks. Some prefer large pieces, others like smaller ones – in some ways this is your choice. Put the peaches to the side in a bowl (not with the milk) with a little sugar sprinkled on them.
  5. Add the hot cream and eggs together in a saucepan at a low heat. The mixture should become thick.
  6. Now add the vanilla to the mixture, cover it and place it in the refrigerator for about 8 hours. The peaches should be in the refrigerator in a separate bowl, waiting as well.
  7. Prepare your ice cream maker and add the cream mixture to the freezer bowl on Setting 1. Bit by bit, add in the peaches until the ice cream becomes frozen.

  1. Mix together the sugar, salt, baking soda and cocoa until fully blended.
  2. Now add in the vanilla, eggs and the butter. Mix until blended smoothly.
  3. Pour chocolate cookie mixture onto sandwich molds slowly. Cook on the griddle according to the ice cream sandwich maker’s instructions.

  • 2 cups heavy cream
  • 3 cups half and half
  • 2 tsp vanilla
  • 1 cup brown sugar

  1. Put half and half on stove in saucepan on medium heat. Do not let boil, simply let it get hot. Add the heavy cream, also let this get hot. Put it to the side in a mixing bowl.
  2. Mix in a bowl the brown sugar, egg yolks and vanilla.
  3. Combine together and put into saucepan at medium heat. Then put back into a covered bowl in the refrigerator for about 8 hours.
  4. Next put into your ice cream maker’s freezer bowl on Setting 1.
